Synopsis
Cauliflower rice, and other foods like kale and avocados, show how popular foods as part of ‘healthy’ diets can also be quite simply delicious.
My mother hates healthy foods. Offer her something buttery and sugary and she’ll want more. Suggest food associated with anti-oxidants, probiotics, low-gluten, or any trendy health term and she’s likely to send it straight to the garbage can. So, she was suspicious when I offered her cauliflower rice. I carefully didn’t tell her that this dish of cauliflower pulverised in a food processor to look vaguely like rice was devised for low-carb diets
