This luscious shake from the So Vegan in 5 The cookbook has coffee in it, which basically makes it acceptable to eat for breakfast, right? We’re going to say yes.

What you need:

For shake:
2 double shots of espresso
⅓ cup chopped vegan dark chocolate
2 cups vegan vanilla ice cream
¼ cup tahini

For topping:
Vegan whipped cream
2 tablespoons roughly chopped coffee beans

What you do:

  1. In a medium heatproof bowl over a pan of gently simmering water, add 3 tablespoons of chocolate and 2 tablespoons espresso, and stir to combine. Once chocolate has melted, use a spoon to smear mixture around inside of 2 serving glasses.
  2. Into a blender, add ice cream, tahini, remaining espresso, and 12 ice cubes and blend until smooth. Pour shake into serving glasses. Top with whipped cream and coffee beans, then roughly chop remaining chocolate and sprinkle on top.
